Happy bday shortness!

I made a choc/vanilla cake soaked in kahlua with cream cheese frosting in between the layers and choc ganache covering the cake!

Dark Chocolate Chip Cookies!


CONFESSION: I have an obsession with dark chocolate. I just love the bitterness with the powerful chocolate flavor coating my tongue. I just can't get enough of it! Every weekend I watch my nephew, and he is the pickiest eater I've ever met. The only foods that I know he never refuses are desserts. After convincing him to finish a bowl of fried rice... plain fried rice with eggs only (can't forget the soy sauce now). I told him he could help me bake some cookies! The recipe was originally adapted from All Recipes: The Perfect Chocolate Chip Cookies . I just tweaked it slightly by adding the dark choc.

Dark Chocolate Chip Cookies

Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup bittersweet dark chocolate chunks

    1. Pre heat the oven to 350 degrees F, so you can just pop the cookies right in
    2. Sift the dry ingredients together (flour, salt, baking soda)


    3. In a separate bowl combine wet ingredients (brown sugar, white sugar, and vegetable oil) until smooth

    4. Add in eggs one at a time
    5. Add almond and vanilla extracts

    6. Fold dry ingredients into wet ingredients a little at a time


    7. Add bittersweet dark chocolate chunks

    8. Line cookie sheet with wax paper
    9. I used an ice cream scoop to drop the cookies on the sheet
    10. then flatten them a little


    11. bake for 10 minutes

Blueberry Lemon Upside Down Cake :3 yum



I was watching food network last night, and It was an episode of Throw down with Bobby Flay where he goes and challenges people. In this episode, it was two cute grannies making pineapple upside down cake. The images on tv made my mouth water, and I wanted some so bad! So, I was thinking, there's still a bunch of blueberries in my fridge from the last time I went picking! *light bulb* I should make a BLUEBERRY LEMON UPSIDE DOWN CAKE! I immediately searched some recipes online, knowing I wanted it to be pretty simple. I decided on using boxed cake mix vs. making it from scratch to save on some time. BLUEBERRY LEMON UPSIDE DOWN CAKE

Ingredients
  • 1 box of yellow cake mix
  • 3 eggs
  • 1 1/3 cups water
  • 1/3 cup oil
  • 2 teaspoon lemon extract
  • 2 cups blueberries
  • 1 cup brown sugar
  • bundt pan or any kind of cake pan

    1. First make the cake according to the directions on the box.
    2. Add lemon extract and stir it in a bit.

    3. Meanwhile, preheat oven to 350 degrees F

    4. Spray baking pan with nonstick spray.

    5. Sprinkle brown sugar in the bottom of the pan.

    6. Spread blueberries on top of brown sugar. (sry forgot to take a pic of the berries on top!)
    7. Pour the cake batter into the pan on top of berries.

    8. Bake for 37 - 42 min (for bundt pan)
    9. When done, take out and cool for about 10 minutes.

    10. Flip the cake out onto a plate, and enjoy! :3

Too bad I was hardcore A-Z-N in middle school when I made my first aim sn, and.. it just stuck. So.. I'm pretty much a noob at blogspot, but seeing as I love browsing others, I want to try one out myself :).
